    Préparez la pâte. Dans une tasse, délayez la levure avec 3 c. à soupe d'eau tiède. Dans un saladier, mélangez la farine et le sel. Faites une fontaine et versez au centre la levure et les 10cl d'eau tiède. Travaillez la pâte sur le plan de travail fariné jusqu'à ce qu'elle devienne souple. Laissez lever 3 heures à température ambiante.<o:p></o:p>

    Sortez le beurre du réfrigérateur pour qu'il ramollisse. Beurrez un moule à manqué.<o:p></o:p>

    Une fois que la pâte a triplé de volume, abaissez-la sur le plan de travail en lui donnant une forme carrée d'environ 1cm d'épaisseur.<o:p></o:p>

    Tartinez le carré de pâte de beurre et saupoudrez de sucre à 3cm des bords .<o:p></o:p>

    Repliez la pâte en trois. Aplatissez-la très finement au rouleau à pâtisserie. Repliez à nouveau en trois. Etalez en lui donnant une forme ronde.<o:p></o:p>

    Faites cuire au four 35 mn. Au bout de 10 mn, arrosez le gâteau toutes les 5 mn avec le beurre qui fondra pendant la cuisson.<o:p></o:p>
